The exquisite shiitake mushroom takes centre stage in this immunity boosting broth, not only for its rich savory flavour, but also due to is health promoting polysaccharides, known to support and strengthen the immune system. In addition we have included a range of ingredients identified by our inhouse naturopaths for their positive affect on our immune system such as garlic, turmeric, thyme, beetroot and apple cider vinegar.
Ingredients
- 1 T. olive oil
- 1 large yellow onion, chopped
- 2 stalks celery, chopped (or 100g celeriac)
- 3 garlic cloves, minced
- 100g shiitake mushrooms, chopped
- 1 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. fresh grated turmeric
- 1 T. fresh grated ginger
- 1 T. each of freshly cut thyme and marjoram
- 6 cups water
- 2 heaped tsp. vegetable broth powder (we used Nutra Organics)
- 1 small beetroot, grated
- 1 T. apple cider vinegar (optional)
Method
Heat up oil in a large pot over medium heat. Add onions and sauté for 5 minutes or until translucent. Add in garlic and cook for 1 more minute.
Add in celery and mushrooms and saute for about 10 minutes or until mushrooms have wilted.
Add in remaining ingredients and bring to a boil. Cover and gently simmer for 20-30 mins.
Serve warm or store for up to 1 week in the refrigerator.
