Easy and nutritional yet cost effective, this colourful salad makes a great addition to any meal and can be whipped up in just a few minutes. The salad ingredients are a guide and can be substituted for similar seasonal vegetables of your choice.
- 1 can mixed beans
- ½c red capsicum
- ½c yellow capsicum
- ½c daikon
- ½c red cabbage, shredded
- ¼c parsley, mint, or other fresh herbs
Cut capsicum and daikon into small cubes, and add to a large bowl with the mixed beans, shredded cabbage, and herbs.
In a separate bowl, add dressing ingredients and mix well.
Pour dressing over the salad and mix through.
