Cabbage can be eaten raw (added into salad) or cooked. Cabbage is a good staple winter vegetable. When cooked the colour can turn blue in the presence of alkali found in tap water, this can be prevented by adding a little vinegar, lemon juice or wine. Contains a rich source of vitamin C (more than in oranges).
