Quick and Easy Organic Christmas Dinner for 6!

While we believe Christmas should be all about great food, we also understand that not everyone wants to be in the kitchen for hours preparing a heavy winter feast in mid-summer.

Salmon Christmas

For under $25 per head, you can have a delicious summer feast ready in less than an hour! Here's how to create this quick and easy celebration spread:

  • Aoraki Hot Smoked Salmon - This is the pinnacle of convenience food - literally take it out of the packet and it's ready to eat! It's deliciously rich and smoky and is the perfect amount for a table of six. We've smeared Genoese pesto over the top to make it look like we've gone to a little effort (but we really haven't!).
  • Jersey Benne new potatoes - we par boiled these beauties, gave them a shake in the pot to smash them up a little (which helps make them crispy) and then finished them off by roasting in sea salt and olive oil at 180°C for 25 mins. Toss them with chopped BBQ Hello Raw almonds, Prana micro greens and something so everyday turns into something so special!
  • Summer salad - a beautiful butter crunch lettuce from Common Property serves as a base and then we threw in every bright and summery ingredient we could find - as you can see we didn't hold back with capsicum, cucumber, strawberries, avocado and feta cheese all competing for show time in this fiesta of freshness. The salad could be dressed with your favourite dressing but don't underestimate the power of the smoky fish and pesto to give it the boost of flavour you need.
  • Delicious Dessert - we've got Christmas mince pies, Swiss Bliss handmade vegan chocolates and classic summer fruit ambrosia (whipped cream, icing sugar to taste, yoghurt, and summer fruit). We also added a teaspoon of brandy to the ambrosia for a festive touch!

To keep costs reasonable we've used a few of the same hero ingredients in multiple locations such as lettuce, Prana micro greens (as a delicious, nutritious and exquisitely pretty garnish!), edible flowers from the garden (calendula and pansies) and strawberries everywhere! 

Add table decorations such as flowers, candles, napkins, Christmas crackers and organic wine and you are well on your way to a very happy Christmas indeed!
