Easy Pea and Coconut Soup

We love soup. It is nourishing, tasty and warming and can be so simple. As the days shorten we particularly love a recipe that can give you all these things but takes no time at all to bring together using basic pantry staples. Whether you're looking for a warming lunch or a quick light supper, the freshness of peas paired with mint provides the perfect mid week pick-me-up just when we may need a little pep.


Serves 4-6

  • 1T olive oil
  • 2-3 spring onions, chopped
  • 800g organic frozen peas
  • 400ml can coconut milk (or cream)
  • 750ml vegetable stock
  • Lemon juice/mint leaves


  1. Heat oil, add spring onions and gently sauté over medium heat for a minute or two.
  2. Add peas, coconut milk and vegetable stock and bring to the boil. Simmer for 5 minutes.
  3. Take off the heat and blend until smooth.
  4. Serve with a squeeze of lemon juice and mint leaves.
