VEGAN ORANGE & DATE SCONES
What we love about this recipe is that it celebrates the whole orange. Unlike other recipes, we have used both fresh orange pieces and the zest for a double hit of citrus flavor. They are not too sweet, and oh so comforting, enjoy!

Makes 9 large scones
Ingredients:
- zest of one large orange
- 1 large orange, skin removed and cubed
- heaped cup of dates (about 120g)
- 2 cups white flour
- 1/2TB cinnamon
- 1/4 cup raw sugar
- 2.5 tsp baking powder
- 1/2 tsp salt
- 1/2 cup coconut oil, softened
- 1 cup coconut milk (we used coconut milk from Tetrapak, not a can)
- 1sp vanilla essence or extract
Method:
- Preheat over to 200 degrees fanbake
- In a large bowl, combine orange zest, flour, sugar, salt, cinnamon and baking powder
- Make a well in the middle and add softened coconut oil, chopped dates, chopped orange and coconut milk.
- Mix with a knife, careful not to over-mix
- Bake for 15mins until scones have lightly browned on top.
- Once cooled dust with icing sugar (optional)
