VEGAN ORANGE & DATE SCONES

What we love about this recipe is that it celebrates the whole orange. Unlike other recipes, we have used both fresh orange pieces and the zest for a double hit of citrus flavor. They are not too sweet, and oh so comforting, enjoy!

Makes 9 large scones

Ingredients:

  • zest of one large orange
  • 1 large orange, skin removed and cubed 
  • heaped cup of dates (about 120g)
  • 2 cups white flour
  • 1/2TB cinnamon
  • 1/4 cup raw sugar
  • 2.5 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut oil, softened
  • 1 cup coconut milk (we used coconut milk from Tetrapak, not a can)
  • 1sp vanilla essence or extract

    Method: 

  1. Preheat over to 200 degrees fanbake
  2. In a large bowl, combine orange zest, flour, sugar, salt, cinnamon and baking powder
  3. Make a well in the middle and add softened coconut oil, chopped dates, chopped orange and coconut milk.
  4. Mix with a knife, careful not to over-mix
  5. Bake for 15mins until scones have lightly browned on top. 
  6. Once cooled dust with icing sugar (optional)
