Teva's Vegan Pea-sto

Teva is our Head of Retail and also happens to be a fabulous cook. Here's one of his easy-peasy recipes that uses a household staple, frozen peas, to make a fresh, nutritious and affordable vegan pesto! Great on pasta and as an alternative to avocado on toast. Here's how it's done
Ingredients:
- 1 c frozen peas
- 1 clove of garlic, crushed
- 1/4 c hemp seeds
- Juice of 1/2 lemon
- 1 T olive oil
- Salt to taste
Method:
Boil peas for 3 mins. Rinse under cold water to cool and mix with all other ingredients. Blend and voilà.
This is delicious just on its own as a spread, as the base of a pasta sauce (add a bit more oil to make it saucy) or mixed with soft cheese to make a dip. We added quark and a handful of fresh chopped herbs to make the spread below.
