This is a delicious recipe which comes together very quickly and is sure to become a family favourite. We've used chicken mince but you can use any quick cook protein and still get the same great flavour.
Ingredients
- 2 tbsp coconut oil
- 2 garlic clove, minced
- 400g organic chicken mince
- 2 tsp curry powder
- 2 tbsp red curry paste
- 2 tsp tamari
- 3 cups chicken stock
- 400ml coconut milk or cream
- 60ml apple cider vinegar
- 90g peanut butter
- 2 cups of chopped greens (i.e. chard, spinach, silverbeet)
To serve:
- ΒΌ c peanuts, lightly roasted and finely chopped
- Roughly chopped fresh coriander leaves
- Rice or noodles
Method
- Heat oil in a large pan over medium heat and add garlic. Cook for a minute or until it turns golden.
- Add chicken mince and cook for a couple of minutes, breaking it up as you go, until it mostly changes from pink to white.
- Add red curry paste, curry powder and tamari. Cook for a further minute.
- Add chicken stock, and simmer for a minute or two.
- Add coconut milk, peanut butter and vinegar, and mix well to dissolve the peanut butter.
- Add greens, and cook in the sauces for 30 seconds or until wilted.
- Take off the heat and sprinkle with coriander and peanuts and serve on rice or noodles.
