Oat & Apricot Cookies

This recipe is one from our in-house Commonsense Kitchen team in Lower Hutt who bake these fresh for our stores using exclusively organic ingredients. We've had a few requests for the recipe so here it is for you to make and enjoy at home. You can find everything you need to make these delicious, nutritious cookies in our stores or online.  Method

  1. Core the apples and chop into chunks. Place in a lidded pot with a dash of water and cook over a low heat until the apples are tender, about 10-15 minutes.  Puree with a stick blender or food processor. 
  2.  Cream the coconut oil and sugar until pale and well aerated. Add the apple puree and mix well.
  3.  Add the rest of the ingredients and mix until just combined.
  4. Divide mixture into 12 even pieces, roll these into balls and place on a tray with 4-5cm space between to allow the cookies to spread.
  5. Bake at 170⁰C for 10 minutes. Use a fork or the back of a spoon to press the cookies down a little.  Return the cookies to the oven for 3 more minutes.
