Nut Butter Chocolate Bites
This chocolate and nut butter slice is a perfect for a "little something" to keep in the fridge ready to enjoy whenever you fancy. It is wonderfully simple to make, requires no baking and is made with a handful of wholesome, everyday ingredients.
Ingredients
For the nutty base
-
150g smooth nut butter (almond butter, peanut butter or tahini)
-
60g ground almonds (or almond flour)
-
40g fine rolled oats
-
⅓ cup hemp seeds
-
60ml maple syrup
-
1 tsp vanilla extract
-
A pinch of sea salt
For the chocolate topping
-
100g dark chocolate (we used the new Commonsense Pantry 60% chocolate buttons)
-
Flaky sea salt, for sprinkling
Method
1. Line a small rectangular tin or dish (approximately 15cm x 8cm) with baking paper, making sure the paper comes up over the sides so you can easily lift the slice out once chilled
2. Add the nut butter (or tahini), ground almonds, oats, hemp seeds, maple syrup and vanilla extract to a mixing bowl. Add a pinch of sea salt and mix until thoroughly combined
3. Transfer the mixture to your prepared tin. Using the back of a spoon or spatula, press down firmly and evenly to create an even base
4. Melt the chocolate in a heatproof bowl set over a pan of gently simmering water (a bain-marie), making sure the bottom of the bowl doesn't touch the water
5. Pour the melted chocolate over the base and spread evenly to cover
6. Place in the fridge for about 1 hour, or until the chocolate has completely set.
7. Sprinkle with flaky sea salt, then lift out of the tin and slice into squares or fingers.
