Anna's Seeded Crackers
A recipe that ticks all the boxes: zero-waste, gluten-free, vegan, nutritious and delicious! Made with simple pantry staples, these crackers are wonderfully easy, affordable and so satisfying, you may never reach for the store-bought kind again. Ingredients:
- 300g of mixed seeds (Anna has provided her exact ratio below)
- 1 cup of cold water
- 75g pumpkin seeds
- 75g sunflower seeds
- 80g sesame seeds (try a mix of white and black sesame seeds!)
- 38g flaxseed/linseed
- 38g chia seeds
- 1½ tsp ground spices like cumin and/or turmeric, or rosemary
- 1½ tsp salt
Method:

Soak the seeds: Combine the mixed seeds, salt and ground spices in a bowl. Add 1 cup of cold water and stir well to combine. Leave to sit for 15 minutes.

Preheat the oven to 160°C fan bake. Line a baking tray with parchment paper. Tip the seed mixture onto the tray and spread it out evenly, using the back of a spoon or a spatula to press it into a thin, even layer, (approximately 4mm thick).

Bake for 30 minutes.

Remove the tray from the oven and carefully cut it into squares or rectangles using a sharp knife

Return the tray to the oven and bake for a further 25–30 minutes, or until the crackers are golden and crisp. Check them every 10 minutes.

Remove from the oven and allow the crackers to cool completely on the tray before serving or storing.
