This hearty soup is a nutrient dense meal packed with plant protein, fibre and phytonutrients from the blend of lentils, quinoa, amaranth, buckwheat and vegetables.

Ingredients
(Serves 4)
• 1 onion
• 2 sticks of celery
• 1-2 carrots
• 1 capsicum
• 4 tablespoons olive oil
• ½ chilli, finely chopped (or a pinch of chilli flakes)
• 2 tablespoons tomato paste
• 1-2 vegetable stock cubes and 8 cups water
• 1 can chopped tomatoes
• 1½ cups Ceres Organics Ancient Grains Soup Mix
• 1 big handful of chopped spinach (frozen is okay)
• 1 bunch fresh coriander, roughly chopped
Method
Finely chop onion, celery, carrot and capsicum.
Heat olive oil in a large saucepan at medium heat. Cook vegetables until browned. Add chilli and tomato paste, stir fry for 1-2 minutes. Add stock and chopped tomatoes, bring to the boil, then reduce to a simmer.
Add Ancient Grains Soup Mix and continue to simmer for around 35 minutes, or until grains are cooked. Add the spinach 5-10mins before taking soup off the heat.
Take off heat and serve garnished with coriander.
