These dark chocolate and banana cookies have a cake-like texture and are a hit with the whole family. Best of all they are wholly organic and made with as many certified Fair Trade products that we could find! The perfect treat if you're hosting a Fair Trade coffee break this Fair Trade Fortnight, for popping in school lunches or to give to someone who just needs a pick-me-up. Whatever the occasion - Kindness Cookies are for sharing!!

Ingredients
- 2 Fair Trade bananas, mashed
- 1/4 cup Fair Trade coconut oil, melted
- 1/2 cup Fair Trade Golden Sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups flour (we used 1 cup each of wholemeal and white flour)
- 1 cup desiccated coconut
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 100g Fair Trade dark chocolate, chopped
Method
Preheat oven to 180 C. Grease 2 baking sheets and set aside. In a large bowl, beat mashed banana, coconut oil, sugar, egg, and vanilla until mixture is smooth. Add flour, coconut, baking powder, baking soda, salt, and cinnamon, and mix until a dough forms. Fold in chocolate chips.
Dollop heaped teaspoons of the cookie dough and place well apart on prepared baking sheets to allow for spreading. Bake for 10-12 minutes or until edges are lightly browned. Cool cookies 5 minutes on baking sheet, then transfer to a cooling rack.
Sprinkle with a good dose of loving kindness and good vibes and they're ready for sharing.
