Corn fritters are a classic light meal, often enjoyed in late summer when the corn is plentiful. In fact this is an easy meal all year round using frozen organic corn which is available unpackaged from our freezer. Fritters are a great way to sneak all kinds of goodness into your diet (we've included seaweed granules in ours) and the kids will happily devour them - none the wiser! Separating the eggs and whipping the whites makes these fritters extra light and fluffy. Give them a go- they're guaranteed to become a family favourite!
Ingredients
Makes 12
- 1½ C wholemeal spelt flour
- 3 eggs, separated
- 1t salt
- 1t seaweed granules
- 2t baking powder
- 1c water
- 1c corn (fresh or frozen)
- 1c grated cheese, we used Hohepa grating mozzarella
- 2T fresh herbs, we used parsley
- Oil
Method
Mix flour, egg yolks, salt, seaweed, baking powder and water until smooth. Leave to stand for 10 minutes.
While waiting, whip egg whites to soft peaks.
Add corn, cheese and herbs to the mixture and lastly carefully fold in egg whites.
Heat oil in a frying pan over medium heat and cook spoonfuls of the mixture until golden on each side (about 3-5 minutes each).
