Barley flour is starchy and soft, with a sweet earthy taste. It can be used to thicken gravies and sauces, and makes lovely pancakes, when mixed with buttermilk. Has a very low gluten content, so when baking breads it is best to mix 50:50 with a higher gluten containing flour.
